Owner Robert Balzebre’s Solei Beach Club Debuts Seafood-Forward Mediterranean Dining in Miami Beach

MIAMI BEACH, Fla.--(BUSINESS WIRE)--Solei Beach Club, the 11,500-square-foot oceanfront day club opened by hotelier Robert Balzebre’s Chisholm Properties South Beach at the Kimpton Surfcomber Hotel, has launched a chef-driven Mediterranean dining program led by Executive Chef Gastón. The kitchen at 1717 Collins Avenue serves daily from 11 a.m. to 5 p.m., with the bar pouring until 6 p.m., and the full menu is available to hotel guests, locals, and visitors alike.

The program arrives as Miami Beach’s day clubs increasingly compete on their kitchens as much as their cabanas. Beachfront dining on Collins Avenue once meant concession fare; today, oceanfront venues treat chef-driven menus as the anchor of the daytime experience and a reason for guests to stay from late morning through the final pour. Solei was designed around that premise, with the food and bar programs built into the concept rather than added to it.

Chef Gastón composed the menu around shareable, seafood-forward plates that filter Mediterranean coastal cooking through South Florida ingredients.

“My inspiration for the Solei Beach Club experience is rooted in the spirit of the Mediterranean – its rich diversity, vibrant culture and timeless sense of enchantment – fused seamlessly with the energy and flavors of South Florida,” said Chef Gastón. “It’s about bringing that global coastal essence right here to our Miami Beach backyard, creating something that feels both transportive and deeply local.”

A raw bar anchors the lineup with oysters, ceviche, and octopus carpaccio, building to the club’s signature presentation: the “Seafood Colosseum,” a tiered tower stacked with oysters, Caribbean lobster, P.E.I. mussels, Quahog clams, and ceviche, with optional caviar and stone crab upgrades.

Smaller plates include a pintxos selection, shrimp ajillo, and chicken drumettes glazed with Maltese lime. Larger dishes range from shrimp and chicken paella to sesame-crusted salmon with tahini, cauliflower, and pomegranate, while lobster rolls and pizzas round out the handheld options. Desserts stay coastal, with a Basque-style pistachio cheesecake and Key lime pie.

The bar program leans Mediterranean, with signature cocktails including the mezcal-and-tequila Spicy Señorita, an Italian Margarita made with Campari and Cointreau, and the club’s frozen flagship, the Passion Du Solei. Solei also pours its own branded DAOU rosé, celebrated each afternoon in a 3 p.m. rosé ritual featuring $5 glasses, a live DJ, and a bubble shower.

“We wanted Solei’s kitchen to be a destination in its own right, not a hotel amenity,” said Robert Balzebre, President of Chisholm Properties South Beach. “Chef Gastón built a menu that gives people a reason to arrive at eleven and stay past the last glass of rosé. That is the difference between a pool deck that serves food and a beach club people plan their day around.”

The menu is served across a Mediterranean-inspired setting of thatched palapas, lounge seating, and private cabanas, with roughly 75 restaurant seats and 150 beach chairs and umbrellas available on the sand. Evening dinner service is planned for the fall season. The club occupies the reworked pool deck of the historic Art Deco property Balzebre acquired and restored through a $35 million renovation that brought the Kimpton brand to Miami Beach for the first time.
