New culinary concept launches February 6, 2026
COVINGTON, Ky.--(BUSINESS WIRE)--The Well Covington is proud to announce an exciting new chapter in its culinary program with the launch of El Jefe’s Cubanos & More, beginning February 6, led by Chef El Jefe Colman in partnership with Chef Timothy Gonzales.
This transition follows the recent announcement from Beards & Bellies, The Well’s current food provider, that they will not be renewing their lease. Their final day of service at The Well Covington will be January 31.

After experiencing the food from El Jefe’s Cubanos & More (and the passion behind it), ownership knew the new partnership was the right fit.

About the Chefs
Chef El Jefe Colman, founder of El Jefe’s Cubanos & More, is known for his infectious energy and deep passion for authentic Cuban and Caribbean-inspired cuisine. His approach is bold, hands-on, and uncompromising—focused on traditional techniques, scratch-made components, and flavors meant to be felt as much as tasted. From his signature Miami-style Cubano bread to his house-made sauces, Chef Colman brings intensity, personality, and soul to every plate.
Chef Timothy Gonzales is a Cincinnati-based chef and hospitality partner with over 25 years of culinary experience, known for blending chef-driven food with high-volume execution. He is the owner of All Around The World Cuisine, a catering and culinary company built on a passion for great food, consistency, and guest satisfaction. Chef Timothy also serves as the private chef to MLB pitcher Bronson Arroyo and partners with several local concepts, providing full food operations for Bromley, Yacht Club, and Lagoon Saloon, while overseeing food service for the Cincinnati Reds’ Visiting Team side throughout the MLB season. Whether catering events or running full kitchen programs, his focus remains simple: deliver high-quality food, take care of every client, and create experiences that keep guests coming back.
