Blue Dalia Mexican Restaurant & Tequila Bar Led by Renowned Chef Roberto Santibañez Opens Today

The Natick restaurant offers authentic, contemporary Mexican food and craft cocktails

NATICK, Mass.--()--Blue Dalia Mexican Restaurant & Tequila Bar, led by renowned Chef Roberto Santibañez as Culinary Director and Geno Bahena as Chef de Cuisine, opens today at the Wegmans in Natick. The restaurant offers authentic, contemporary Mexican food and craft cocktails prepared with market-fresh ingredients.

The inspiration behind Blue Dalia is Chef Roberto’s hometown of Mexico City. Located on the second floor of the new Wegmans, Blue Dalia brings the energy of Mexico’s famous markets to life with its location. The menu features traditional family recipes, seasonal ingredients, and modern soulful dishes.

“We have created a menu that truly showcases the best of Mexico,” Santibañez said. “We offer contemporary takes on authentic regional Mexican cuisine and celebrate seasonal ingredients enhanced by an extensive tequila collection. We are excited for guests to enjoy approachable, but sophisticated dishes.”

Guests will see centuries-old tortilla-making on display as well as hand-crushed salsas and made-to-order guacamole. The Masa Antojitos section of the menu features Mexican staples such as tamales, flautas and quesadillas. Seafood small plates and a wide variety of entrees pay homage to Mexico’s distinctive regional flavors. House favorites include:

  • Enchiladas con Mole Xico, delicious braised chicken with Veracruz style mole on organic corn tortillas
  • Esquites con Langosta, a typical Mexican corn salad made with lobster and queso cotija
  • Tamalitos de Elote, poblano and cheese tamales served with a black bean velvet sauce

Notable restaurant designer Mark Knauer was brought in to develop a cohesive and festive design. Between bright colors and artwork, carefully curated decor and the contrast between light and dark, the space helps diners to travel to the place where the menu was imagined. The Blue Dalia name is a nod to both Mexico’s national flower and Wegmans’ commitment to unparalleled ingredients, bold flavors and exceptional service.

Hand-picked by Chef Santibañez, Geno Bahena will serve as the restaurant’s chef de cuisine, overseeing daily operations of the restaurant.

“We are thrilled with the opening of Blue Dalia and our team is ready to provide a unique dining experience,” Bahena said. “Being inside Wegmans allows us to bring the energy of the markets that are an important part of Mexico’s cultural and culinary identity.”

The tequila bar offers an extensive and creative craft cocktail, tequila and mezcal selection, and is led by Beverage Director Darren Eng, who developed an out-of-the-box cocktail menu. In addition to the iconic Mexican drink - the original Margarita, guests will enjoy innovative cocktails. A few favorites to try:

  • Honey & Spice Margarita, featuring house made spicy honey
  • Mezcal Negroni, highlighting the smokiness that is typical of mezcal
  • Hibiscus Margarita, with house made hibiscus syrup and fresh lime juice

“We have a wide variety of tequilas and mezcals for people to explore,” Eng said. “I am excited to introduce cocktails featuring mezcals, and see guests having fun when discovering new flavor combinations.”

Blue Dalia is located on the second floor of Wegmans Natick, Wegmans’ sixth location in New England since opening in Northborough in 2011. The 146,500-sq. ft. supermarket spans two floors of the Natick Mall. During May, Blue Dalia will be open seven days a week from 3 p.m. to 10 p.m., with a limited Happy Hour menu served from 3 p.m. to 6 p.m. Monday through Friday and 3 p.m. to 5 p.m. on the weekends. Regular dinner service begins at 5 p.m. daily and the bar will remain open until 11 p.m. Lunch and brunch service will be added in the coming months.
