Rising use of chiral chromatography for food authenticity and accuracy of aroma

Chirality is a common property of food components such as proteins and carbohydrate. Proteins composed of amino acids are usually in L- form while carbohydrates are D- saccharides. Enantiomers show different reactions with biologically active compounds of living organisms. The chiral structure of proteins is used to recognize their taste and aroma, which can be analyzed by chiral chromatography.

Contrary to popular belief that nature produces optically pure isomers, certain compounds such as primarily aromatic compounds contain pure enantiomers, often in a specific ratio of each enantiomer. Odorant enantiomers differ in their intensity and character of smell. This ratio of enantiomers in aromatic compounds is essential to ensure the optimal taste or aroma,” adds Amber.

Advantage of chiral chromatography technique over non- chromatographic techniques

Current non-chromatographic methods for analyzing enantiomers include polarimetry, nuclear magnetic resonance, isotopic dilution, and calorimetry. Polarimetry is used to measure ratio, purity, and concentration of two enantiomers while nuclear magnetic resonance quantifies the degree to which a sample contains one enantiomer more than the other.

Isotopic dilution determines the quantity of chemical substances, and calorimetry is used for polymorph assessment and distinguishing enantiomers from racemate based on melting point. However, these techniques require pure samples and cannot separate enantiomers.
