Colorado will be the first region of the series to be released, featuring recipes by world-renowned Andreas Fischbacher, former General Manager of Cloud Nine Bistro in Aspen and Head Chef and owner of the new Allegria restaurant in Carbondale, CO.
Celebrated for putting Aspen’s Cloud Nine Bistro on the international culinary map, Fischbacher is no stranger to creating unforgettable meals for families on ski vacations. His ability to create inspired dishes that appeal to both children and adults, along with his commitment to Colorado’s youth (he recently launched a healthy breakfast and lunch program in a whole foods inspired setting for students at the local Glenwood Springs High School in Glenwood Springs, CO), made him a natural choice to lead the series, which coincided with Portico’s Family Month in March.

Other local recipes created by Fischbacher exclusively for the series include: Grilled Elk Strip Loin with Organic Greens and Kale and Colorado Striped Bass over Roasted Beet Medley, with Applewood-Smoked Bacon Lardon, wilted Arugula and Creamy Polenta, with a Lemon-Caper Butter Sauce.
“There is something so special about gathering around a dinner table and enjoying a home-cooked meal with your family while on vacation,” says Fischbacher, who is currently designing a new summer-inspired menu for the series. “With these recipes, I tried to capture the flavors of local farm raised produce available in Colorado while at the same time creating a world-class culinary experience for the Portico guest that they can easily replicate.”
