During processing most coffee beans are typically either “washed,” where all fruit layers are removed before the beans are dried, or “natural,” where fruit is left intact in the drying process. In the “honey washed” process, the skin of the coffee cherry is removed, but the thick, honey-like layer that protects the bean is left on. This process results in a bright flavor and subtle sweetness imparted by the natural sugars of the fruit.

Only the most mature cherries are hand-picked for this special harvest and sun dried on open-air patios before being fully dried mechanically in order to obtain precise humidity levels for optimal flavor.
