CMC is a cellulose derivative, produced by the catalyzed reaction of cellulose and chloroacetic acid. It is mainly used as a thickener in various applications such as food and beverages, pharmaceuticals, cosmetics, paper making, and detergents. CMC is a more cost-effective and high-performance derivative compared to other cellulose derivatives such as HPC and HEC, and other synthetic stabilizers and thickening agents that are used in pharmaceuticals, paper industries, and other applications.

CMC is used as a viscosity improver and as a stabilizing agent in many frozen food and beverages, especially ice cream and finished wines. It avoids the use of salt ice mixers in ice creams, which reduces the cost of production, and prevents the formation of potassium bitartrate crystals, in the finished wine after bottling, thereby saving energy and processing time. Further, it results in the elimination of expensive cold stabilizers in food and beverages.

The use of CMC as a stabilizing agent has led to reduced production cost and less consumption of other cooling agents, which has increased the overall demand for CMC in the global market,” adds Kurva.

Rising awareness of healthy and processed food

CMC is used as a fat replacer in ready-to-eat food that has influenced the interest of consumers. It adds thickness and texture to low-calorie food products such as fat-free ice cream. CMC extends the solubility of proteins to a certain pH level. It is mixed with whey protein concentrates to replace the use of egg protein and skimmed milk in the formation of cakes; this has reduced the fat content in various food products, especially in bakery products like cakes and biscuits.

In various processed food and healthy nutrition bars, it is used to make the food thick and creamy without adding fat to it. It is used as a low-fat ingredient in various products. Therefore, the demand for CMC is increasing in the food industry with the rising awareness of the consumption of healthy and processed food.
