RENTON, Wash.--(BUSINESS WIRE)--Following the overwhelming success of last summer’s opening of the Hyatt Regency Lake Washington, SECO Development today announced the addition of a new restaurant at Southport. Black Rooster, a Chinese fine dining restaurant focused on the use of fresh, local ingredients, has selected the Lake Washington site for its first international location.
Black Rooster is devoted to sharing thousands of years of Chinese cooking culture with individuals seeking an authentic, gourmet experience. The bistro menu will pair traditional cooking methods with the finest ingredients from across Washington state.
“By duplicating the success we’ve seen for Black Rooster China and emphasizing fresh, healthy and organic ingredients, Black Rooster Lake Washington is poised to become the restaurant of choice for families, working professionals, students, retirees and tourists,” said Yongsheng Guo, owner and operator of Black Rooster Lake Washington and Black Rooster China.
Designed by famous Chinese artist Chonghai Hao, Black Rooster will highlight waterfront views with seating for up to 300 guests and provide a unique dining experience. Inspired by the bistros of the Song Dynasty, the restaurant’s space will feature wood décor accents, tables with a ceramic warmer and an open kitchen display for customers to enjoy performances put on by the chefs.

Black Rooster’s menu will highlight Chinese-style baked breads, organic salads, house-made organic tofu, oversized meatballs, dumplings and organic steamed black chicken soup. All dishes are designed to be healthy and freshly prepared, with primary ingredients, such as chicken and fresh vegetables, sourced from local organic farms.
The Lake Washington operation will replicate the traditional Chinese supply chain by utilizing local suppliers from the Northwest region. Black Rooster is currently looking at local farms such as Mad Matcher Poultry, in Ephrata, and Wilson Banner Ranch, in Clarkston, as potential suppliers.
An additional distinguishing factor, Black Rooster plans to invite twelve celebrity chefs from China every year. Each chef will specialize in unique styles of Chinese cuisine, creating their own menu that will run the twenty-seat dining area for two to three weeks at a time. This exclusive area and experience will be by reservation only. The restaurant also plans to partner with local vineyards and breweries to feature a meticulously curated beer, wine and cocktail spread to complement the food.
Black Rooster Lake Washington is slated to open in September. The restaurant will be open seven days a week, serving lunch and dinner and providing daily happy hour specials.
