STOCKHOLM--(BUSINESS WIRE)--Korean food (HANSIK) is one of the hottest food trends at the moment. When Korea’s public organization Korean Food Foundation visited Sweden last month, they invited Korean and Swedish star chefs Minzi Kim Wind (Mish Mash, Seoul) and Daniel Höglander (Aloë, Stockholm) to a unique culinary opportunity to show what can be done when combining Korean and Scandinavian cuisine.
The chefs created four dishes. The chefs first presented traditional Korean menu, Tteok-galbi and Dak-galbi, then showcased recreated menus, such as Tteok-galbi with Korean Barbecue sauce, Dak-galbi with steamed pumpkin, Gochujang pork with kaviar and crispy rice, Foie Gras, kimchi and fried quail’s egg by adding Scandinavian style. Korean and Swedish fusion symbolizes the different flavors and cultures.
“It was an exciting evening at Aloë with lots of new flavors through Hansik(Korean food). The Korean cuisine is exciting with its many different dimensions and it was great to be given the opportunity to present ‘Hansik in Swedish Kitchen’ inspired by the experimental Nordic flavors,” said Minzi Kim Wind.
The chef Minzi Kim Wind is South Korean with Danish roots and is the head chef of the fine dining restaurant Mish Mash in Seoul.
Daniel Höglander runs the luxury restaurant Aloë in Stockholm and he is also one of the founders of the restaurant Esperanto.
“The Korean flavors attract more and more Swedes who realize that there is more than just kimchi and bibimbap,” said Daniel Höglander. He also mentioned “the unique taste that Korean food ingredient, such as Kimchi, gives the inspiration and draws not only chefs but also the Swedes to further apply them to our own Swedish dining table.”
Korean Food Foundation is a public organization in South Korea which works to spread knowledge about Korean food culture around the world.
Dr. Soo Yon Suh, Director of the Promotion & Communication Division of the Korea Food Foundation who held this event said, “We are very excited that lots of Swedish people experienced and get to know the charm of Hansik and Korea through this event. We hope that more Swedes are inspired and encouraged to cook the cuisine themselves in their own homes.”
