Just Desserts CEO Michael J. Mendes Announces Installation of Industry Leading Tonelli Mixing System

Another in a series of investments by the growing San Francisco company

SAN FRANCISCO--()--Just Desserts has installed a new industry leading Tonelli Planetary Mixing System to augment the capabilities of the company’s production bakery in Fairfield, California. The large-scale Tonelli planetary mixer is well suited to the elevated artisan, made from scratch bakery offerings of Just Desserts, which use organic, vegan, non-GMO, and whole ingredients.

Michael J. Mendes, CEO of Just Desserts was looking for an industry leading mixing system to support the growing company’s needs. He notes, “We strive to produce extraordinary quality bakery offerings, and the cornerstone of this quality starts with the exceptional blending of premium ingredients. The Tonelli mixer is perfectly equipped to aid in the achievement of our high quality standards.” John Wohlgemuth, Just Desserts VP of Operations, also recognizes the mixer’s user-friendly system interface. Wohlgemuth says, “The Tonelli mixer provides additional structure to enable our artisan bakers to optimize the critical timing and process flow within the mixing function, and reduces the chance of product variability.”

The investment in the state-of-the-art Tonelli mixer is yet another in a series of recent investments made by Just Desserts. Mendes adds, “We are excited about these growth investments in support of our commitment to customers and consumers.” Last year, Just Desserts opened a new 75,000 square foot production bakery on a 7-acre site in Fairfield, California. The bakery includes an over 11,600 square foot freezer, dedicated CCOF organic certified production area, and an on-site lab with a focus on food safety, quality, and reliability.
