Four Diamond Restaurant at The Siena Hotel Completes First Renovation in 27 Years

CHAPEL HILL, N.C.--()--Il Palio by The Siena Hotel, Chapel Hill’s only Italian AAA-rated Four Diamond restaurant, has reopened its doors after its first major renovation in two decades. Reconnecting customers with the roots of rustic Italian dining, the transformed restaurant features an open kitchen, a chef’s table, a custom-designed wood-fired grill and a fresh menu by Chef Teddy Diggs, Il Palio’s executive chef.

The renovations began with an architectural redesign by New City Design Group. The open kitchen and chef’s table encourage interaction, a celebrated quality of Italian dining. Il Palio’s new wood-fired grill, custom-designed by Aztec Grill, is one of the only in the state. It allows Chef Diggs to offer a bistecchiera section of the menu, incorporating flavors indigenous to Italian cooking, such as “smoke” and “wood” imbued from the grilling process.

“We now have the ideal backdrop for providing regional Italian cooking with modern comforts and the hallmark hospitality our guests have come to expect,” said Anthony Carey, general manager, The Siena Hotel.

Inspired by his recent research trip to Italy, Chef Diggs’ new menu is designed to highlight the rustic roots of Italian cooking. It consists of simply prepared, thoughtfully sourced dishes such as traditional salt cod mantecato and hand-crafted acorn fazzoletti, accompanied by Chef Diggs’ widely acclaimed sea salt and rosemary focaccia bread. With one of the largest Italian wine cellars in the region, Il Palio complements its menu with more than 400 rare wines from all 20 regions in Italy.

“My approach to Italian cooking is simple: incorporate fresh ingredients and let the flavors stand on their own,” said Chef Diggs. “True Italian cuisine is balanced and rustic, and my role is to provide a time and a place to showcase the ingredients.”
