Some enzymes when used in appropriate quantities can improve the yield in juice and bread manufacturing by as much as 50%. Also, they enhance the visual appearance in terms of color and freshness. For instance, enzymes are used in fruit juices and cut fruits to give them a fresher look. As the demand for value-added products increases, the demand for enzymes for the above purposes also increases.
